Thai Massaman
Chicken Curry
- 80g Roasted Peanuts
- 2 Chicken Drum Sticks
- 150g Potato Cubed
- 150g Onion Cubed
- 3 tbsp Tamarind Paste
- 1 cup Coconut Cream
- 100g Massaman Curry Paste
- 4 cup Coconut Milk
- 3 tbsp Fish Sauce
- 3 tbsp Tamarind Juice
- 2 tbsp Palm Sugar
This classic flavourful curry, also known as the “King of Curries” is a wonderful mix of mild and fragrant herbs and spices. The combination of this curry paste mixed with coconut milk, nuts, chicken and potato is sure to delight.
- Roast the peanuts until browned. Cool then rub them until the skins come away.
- Mix coconut cream and massaman curry paste and bring to a boil.
- Stir in the chicken, onion and potato until mixed.
- Stir in coconut milk and bring back to a boil.
- Add roasted peanuts and simmer for 30 minutes until chicken is cooked.
- Add fish sauce, tamarind paste and palm sugar. Mix together and serve.
