Thai Yellow Curry with
Shrimp and Papaya
- 60g Yellow Curry Paste
- 60g Tamarind Paste
- 25g Palm Sugar
- 70g Fish Sauce
- 210g Papaya Sliced
- 50g Cauliflower
- 150g Prawns, Shelled
- 50g Shrimp Meat
- 30g Carrot Sliced
- 2 tbsp Lime juice
- 450ml Water
This vibrant curry paste is mild to taste but packed with flavoursome ingredient including cumin and cinnamon to add depth and richness. You are just one tablespoon away from an aromatic sweet tasting curry. Perfect with fish or chicken.
- Set a pot of water on medium heat, when boiling, add yellow curry paste and shrimp meat, simmer until the curry paste is cooked well.
- Season the curry with tamarind juice, palm sugar, fish sauce, stir well.
- Add the sliced papaya slides over low heat, simmer until papaya is cooked, about 15 minutes.
- Add the cauliflower, carrots and prawns. Gently boil for about 5 minutes until tender and cooked through.
- Turn off the heat, then add lemon juice.
